Step - 1
1 - Cut the meat in chunks and gently seal it in your pot.
2 - Once the meat is coloured from cooking, take the meat out of the pot and save it for later.
3 - Throw in the carrots and onions cut in thick slices.
4 - Leave them to cook with the diced brisket.
5 - Add the flour, stir with a wooden spoon a little.
6 - Leave to cook until the flour starts to brown then add the wine, cognac, bouquet garni, garlic, salt, pepper and beef shoulder.
7 - Cover and leave to cook for 3 hours.
8 - Bring the heat up. Add the seedless olives and leave to cook 15 minutes.
