Step - 1 | Genoise

Eggs

4 units Eggs

Flour

125 grams Flour

Sugar

125 grams Sugar

1 - Mix the egg yolks and sugar together until the paste whitens.

2 - Add slowly the flour.

3 - Beat the egg whites and add them to the above.

4 - Cook on a flat surface for 10-15min.

5 - Cool and cut it to the right shape and size.

Step - 2 | Bavarois

Double Cream

400 ml Double Cream

Gelatine

6 sheets Gelatine

Lemon

1 units Lemon

Strawberry

500 grams Strawberry

Sugar

220 grams Sugar

1 - Wash and cut in quarters the strawberries and cook them for 30min at medium heat with lemon the juice and sugar.

2 - Mash well with a potato masher and sieve through.

3 - Add the gelatine and keep in the fridge until cold.

4 - Whip the cream.

5 - Gently add the cold strawberry mix to the whipped cream.

6 - Poor the strawberry mouse on top of the genoise.

Step - 3 | Presentation

1 - Slice the strawberries and position on top of the cake.

2 - Leave to set in the fridge for at least 4 hours. Preferably overnight.
