- Fry each side for 2-3 minutes until lightly golden. Serve with a crème fraîche on a side.
- Whisk the eggs and mix with the flour.
- Add grated courgette, onion, garlic and seasoning. Mix well.
- On a medium heat spray the oil on the pan and using the spoon add the mixture to make fritters. I used a metal ring to make them even.
