1 - Cook for 1hr and then turn the oven off. Leave them in the oven until it has cooled down.
2 - Lay dollops of the cream you just made on an oven tray covered with baking parchment.
3 - Slowly add the caster sugar and then the icing sugar.
4 - Beat the egg whites with an electric whisk until they form soft peaks.
